Here in Spain, we often enjoy cake as a sweet treat for merienda (the traditional mid-afternoon snack). Most Spanish cakes are light and moist, with just the right amount of sweetness to feel indulgent without inducing cavities. And because most of them are made with extra virgin olive oil, they’ve even got some health benefits without compromising the flavor!
