1½ cups all-purpose flour ½ tsp kosher salt 2 tsp baking powder 1 cup yogurt 1 cup sugar 3 eggs 2 tsp lemon zest ½ tsp vanilla extract ½ cup olive oil

Preheat the oven to 350°F (175°C). Whisk the flour, salt, and baking powder together in a medium bowl.

In another bowl, mix the yogurt, eggs, sugar, vanilla, and lemon zest.

Incorporate the dry ingredients into the wet ones, stirring until smooth.

Now start to add the oil slowly, being careful not to overmix!

Pour the batter into a prepared baking pan and bake for 30–45 minutes. Baking time depends on your pan, but start checking with a toothpick at 30 minutes.

Let the cake cool for 10 minutes before removing from the pan. Serve & enjoy!
