Ingredients

1.25 lbs beef chuck  4 cloves garlic 1 large onion 1 green bell pepper 4 medium carrots 3 medium potatoes 2 bay leaves 3/4 cup wine Water Salt Ground pepper Olive oil

Spanish beef stew is the ultimate comfort food! This is my take on my mother-in-law's classic recipe.

Season the beef with salt and pepper, add it to a pot with olive oil, and brown on both sides.

Set the beef aside and add the garlic, peppers, and onion to the pan. Sauté until tender and soft.

Add the carrots, bay leaves, and your choice of wine (I went with white here).

Now we'll let the wine reduce a bit before adding the beef back in.

Add the beef back in, making sure you get all the flavorful juices from the plate, too!

Add enough water to cover the stew, cover the pot, and let the stew simmer for about 90 minutes.

Once the beef is nice and tender, add in your potatoes and let simmer uncovered for 20 more minutes.

Taste to adjust for salt and pepper, serve, and enjoy!
