Ingredients

1 whole chicken, skin on 1 head garlic, peeled 1 handful parsley 1 tsp salt 2 tsp black pepper 1 cup dry white wine 1 cup water Extra virgin olive oil 1 chicken bouillon cube

Today I'm making my popular Alicante-style roast chicken & taking some new photos for the blog!

We'll start by blending the garlic, parsley, olive oil, salt & pepper into a paste. I attempted to use the Vitamix at first...

...and ended up needing the mortar & pestle anyway. At least it made for a nice photo!

I spread the garlic and parsley paste over the chicken and stuffed some into the cavity as well, then drizzled the whole thing with olive oil.

I also added some white wine and a stock cube. We'll cover it with damp parchment paper that will come off near the end to get that nice crispy skin!

Into the oven it goes! Now we bake at 400ºF (200ºC) for 1 hour to start. Our hands-on prep work is done!

After an hour, I checked the chicken and removed the parchment paper. Just 15 minutes to go!

The chicken is out of the oven and it smells incredible! I'm letting it rest for 10 minutes before we dig in.
