This simple vegan stew is quick, healthy, and delicious! Perfect as a winter comfort food or as part of a Spanish tapas spread.


1 jar chickpeas 10 oz fresh spinach 2 thick slices bread 15 Marcona almonds 1/4 cup tomato sauce 3 garlic cloves Extra virgin olive oil 2 tbsp sherry vinegar 1 tsp ground cumin Cayenne pepper 1 tsp salt Black pepper 1 tsp smoked paprika

Let's make Spanish spinach and chickpea stew! Here are the simple ingredients you'll need.

To start, heat your olive oil in a pan and wilt the spinach, working in batches if need be.

Once the spinach has wilted, set it aside and add more olive oil to the pan.

Now we'll fry the bread and nuts together until they're just browned. 

Time for the garlic and spices! We'll add those into the pan and sauté for a few minutes.

Add the bread, nuts, and spices to a blender along with the sherry vinegar, and blend together.

Add water if needed while blending. You want the mixture to be the same texture as peanut butter.

We'll add the creamy sauce back to the pan along with the chickpeas and tomato sauce. Stir in the spinach and let cook for 15 minutes.

And we're done! Serve on its own, or with some crusty bread or rice. Buen provecho!
