Spanish Chicken with Tomato Sauce (Pollo con Tomate)

This easy and delicious recipe for Spanish chicken in tomato sauce is perfect for a quick mid-week meal. The whole family will love this moist and flavorful pollo con tomate!

Ingredients

  • 8 chicken drumsticks or chicken breasts
  • salt and pepper to taste
  • flour for dusting
  • 2 tablespoons olive oil
  • 1 red pepper diced
  • 1 onion diced
  • 4 ripe tomatoes diced (or 2 cans of diced tomatoes)
  • 5 cloves garlic minced
  • ½ cup chicken stock

Instructions

  • Season the chicken with salt and pepper, and lightly dust with flour.
  • Heat a heavy skillet with a couple of tablespoons of olive oil. Sear the chicken on all sides until golden.
  • Add the onion, garlic and pepper and sauté for about 1 minute.
  • Add the chicken stock and bring to a simmer, then cook for 5 minutes, or until reduced by half.
  • Add the diced tomatoes and bring to a simmer. Cover for 10 minutes, or until the chicken is fully cooked.
  • Remove the lid and let the sauce reduce over a very low simmer if it's still too thin.
  • Take off the heat and let the dish sit for at least 30 minutes for best flavor.
  • Serve hot with rice or with your favorite potato dish.

Notes

  • I recommend using a cast iron or stainless steel skillet. Any heavy-based pan will retain the heat and improve the result!
  • Letting the stew sit overnight in the fridge will improve its flavor. That's why leftovers taste so good!
  • Freeze leftovers for up to 3 months.
