Apple Olive Oil Cake Recipe

This Spanish apple olive oil cake is topped with a crisp cinnamon crumb on top. It's the perfect afternoon snack or picnic dessert!

Ingredients

Apple Olive Oil Cake

  • 1 ½ cups cake flour or all-purpose flour
  • ¼ cup spelt flour or additional cake flour
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • ¾ cup granulated sugar
  • ¼ cup honey optional
  • 3 large eggs
  • 1 scant cup full-fat unsweetened Greek yogurt
  • cup Spanish extra virgin olive oil I used a fragrant hojiblanca
  • 1 large green apple finely diced
  • powdered sugar to top the cake unless making the crumb below

Optional Crumb Topping

  • ¼ cup butter at room temperature
  • ½ cup brown sugar
  • ¼ cup all-purpose flour
  • 1 tablespoon cinnamon

Instructions

  • Preheat the oven to 375°F (190°C), and then grease and flour a 9½ inch (24 cm) cake pan.
  • Mix together the flour, spelt flour, salt, and baking powder in a medium sized bowl.
  • In a separate bowl, beat the sugar, honey, and eggs on medium-high speed with a hand mixer for about two minutes. Then, whisk in the Greek yogurt on low speed.
  • Slowly drizzle in the olive oil while mixing the batter on low.
  • When combined, fold in the flour mixture by hand using a rubber spatula. Stop mixing as soon as everything is combined; you don't want to overmix.
  • Fold in the diced apple until incorporated, then pour the batter into the prepared pan.

Crumb Topping (Optional)

  • For the crumb, in a small bowl, mix together the flour, cinnamon, and sugar.
  • Add the room temperature butter and mash with the back of a fork to make a chunky paste with plenty of crumbs.
  • Sprinkle the apple olive oil cake with the crumb topping.

Baking

  • Bake at 375°F (190°C) oven for 50 minutes, or until a toothpick inserted in the middle comes out with only a few crumbs.
  • Let the cake cool for at least 20 minutes before removing from the cake pan. Right before serving dust with powdered sugar (unless you used the crumb topping, in which case the additional sugar isn't necessary!).
  • Slice and serve. Enjoy while fresh and warm!

Notes

  • If you don't have spelt flour, add another ¼ cup of all purpose flour.
  • Don't want to use honey? Add another ¼ cup of granulated sugar.
  • Be careful not to overmix the batter, or the cake may be tough.
