Fried Goat Cheese with Honey

This easy-to-prepare almond-crusted fried goat cheese with honey recipe is out of the world! This must-try Spanish tapa can be made in 10 minutes with only 6 ingredients.

Ingredients

  • ½ cup raw blanched almonds such as Marcona almonds
  • 5 Ritz crackers or any other butter cracker
  • 2 egg yolks
  • 4 slices firm goat cheese about ⅓ inch thick
  • olive oil for frying
  • floral honey such as orange blossom honey

Instructions

  • Crush the almonds and crackers into fine crumbs with a food processor or rolling pin, then mix them together and spread on a plate.
  • Lightly beat the egg yolks in a wide bowl.
  • Coat each slice of cheese in the egg yolks, making sure the entire slice is covered. Coat in the almond-cracker mixture, making sure they're evenly coated.
  • Heat the oil to medium high, but don't let it smoke. Fry the cheese until golden brown on each side, flipping carefully with a spatula after about 1-2 minutes per side.
  • Drain the fried cheese on paper towels for a minute, then serve right away topped with your favorite honey. Enjoy immediately!

Notes

  • Use a firm goat cheese, not soft chevre for this recipe.
  • If you don't have a food processor to crush the almonds, put them in a Ziploc bag and crush them with a rolling pin or meat tenderizer. You can use ground almonds as well to make this quick and easy.
