One of our favorite tapas in Malaga are shrimp skewers.
We first enjoyed this super simple and delicious starter at the Mercado del Carmen, a local market with some of the freshest seafood around. The same brochetas are available at the Mercado Atarazanas and also a little bar hidden in the classic Malaga neighborhood of El Perchel. We love it because if the shrimp are fresh it’s a guaranteed crowd-pleaser. Want to really show off? Serve it like they do at the market with a little slice of bread and some fresh ali-oli.
Here's our Malaga style shrimp skewer recipe:
Recipe: Shrimp Skewers (Brochetas de Gambas)
Ingredients
- 50-60 shrimp medium sized
- 6 tablespoons of extra virgin olive oil
- 5-6 wooden skewers
- 3 cloves garlic
- Salt
- paprika
Instructions
- Coat the part of the skewers where the shrimp will go with olive oil
- Peel the shrimp and stick them on the skewer trying to keep it as symmetric as possible.
- Chop the 3 cloves of garlic, then coat the skewers with the garlic and olive oil adding salt and a generous amount of paprika to taste.
- Grill the shrimp on one side until they begin to turn white, then turn them over to cook on the other side.
- Serve with a slice of fresh bread and ali-oli (garlic mayonnaise)

This easy shrimp skewer recipe is so simple and delicious that it will easily become part of your grilling repertoire. Plus, since the shrimp aren’t fried, you don’t have to feel too guilty about indulging! If you like it less spicy, you can also marinate the shrimp using lemon juice and garlic. Our family and friends enjoy the shrimp skewers both ways!
